2 cups skim milk
1 cup cream
1 can coconut cream
1 cup basmati rice
1/2 cup Sunsweet prunes, chopped
1 tsp ground coriander
1 tsp ground cinnamon
1 tsp ground turmeric
1 tsp ground cardamom
1/4 cup chopped pistachios
In saucepan, bring milk and cream to boil; stir in rice. Cook, stirring constantly without a lid, for 20 to 25 minutes or until very tender. Let cool completely.
Stir in coconut cream, prunes, cardamom, turmeric, cinnamon and coriander. Sprinkle with pistachios.
